Mezcal is one of Mexico’s oldest stimulant beverages, dependant on the cultivation of maguey in a region that unites environmental characteristics and high altitudes almost as remote as the very origins of American agriculture. It is obtained through the distillation and refinement of the juices prepared directly from sugars extracted from the mature heads of the pre-cooked agave that are then either fermented.
Once the process of fermentation was introduced to Mexico, drinks of high alcohol content were obtained from agave; these were originally known as “agave wine” or “mezcal wine,” later developing in to tequila late in the 19th Century. Technically speaking, one can say that tequila is a form of mezcal but not that mezcal is a form of tequila.
Specific differences exist between the two drinks, principally in the form of production and en the variety or varieties of agave from which they are produced. Mezcal is a drink using traditional methods and 100% of agave, while other national drinks other created using industrial processes and not using 100% agave.
The word ‘mezcal’ comes from the ancient Mexican language Nahuatl, where the word ‘mexcalmetl,’ means agave. Presently, the term commonly used to describe agave is ‘maguey,’ which does not describe a single type of cactus, but refers, in botany, to the more than 120-species-strong Agaveaceae family, which includes Potatorum zucc, Amarilidáceas (known as ‘Tobalá’) and Angustifolia haw (known in modern Mexican Spanish as ‘Espadín’.) Due to their specific vegetative, these varieties of agave give mezcal it unmistakable quality and flavour.
It is said that mezcal produces an effect similar to that of a tonic with more than just a subtle aphrodisiacal effect, consuming mezcal may mean that the sex life and the very life of the individual himself is prolonged.
